
My friend, Janelle, gave me this recipe last year and I just made it for the first time yesterday. It tastes just like the real thing and it's pretty simple! Enjoy!
CAFE RIO SALAD:
Dressing:
2 tomatillos (green tomatoes wrapped in corn husks)
1 c. mayo
1/2 c. buttermilk
1/2 bunch cilantro
2 cloves garlic
1 ranch packet
1/4 t. cayenne pepper
Blend in a blender. Put in fridge overnight.
Meat:
1 c. brown sugar
1 c. salsa
meat of choice (pork roast, beef roast, chicken)
Cook 8-10 hours on low in crockpot. Shred meat with a fork when tender.
Rice:
2 c. rice
1 T. butter
2 cloves garlic minced
4 t. bouillion
2 c. water
3 T. chopped cilantro
1 can green chiles
3/4 t. salt
1/2 chopped onion
Add all ingredients except the rice. Bring to a boil, then add the rice to cook.
Options:
tortilla strips, parmesian cheese, tomatoes, guacamole, black beans
Put salad on top of cooked tortillas (you can add melted cheddar cheese) and add the meat, rice, dressing, and optional toppings. Yum!

You better let everyone know that it is not TOMATOES in the dressing,,, it is TOMATILLOS.... very different!!! That is crucial!!!! Tomatillos are in the produce section most the time by the peppers,, they are a green tomatoe with a husk around it,, take the husk off and throw two of those in the blender. So EDIT your post right now!!!
I'm glad you made it though,, oh, and I only make 2 cups of Minute Rice and Add 2 cups of water because 3 cups of rice feeds a ton! and don't forget Black Beans, and Melted Cheddar on the Tortilla,, Delish!
and one more thing,,, I don't put a 1/2 cube buillion(sp?) in the meat, I put that in the Rice. So when I make the rice I put all the ingredients, except the minute rice, in a pot on the stove and get everything boiling. So the onions, cilantro, bouillion, garlic, spices, etc. Then I chuck the rice in, put the lid on, and let sit for 10 minutes or so. MMMMmmmmm, so good! I am sorry for the long comments, I just wanted to clear things up so it's the best it can be,,, I'm a nerd I know.
